Ingredients:
2 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup milk (whole or 2%)
1/4 cup chopped green onions or chives
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup breadcrumbs (optional, for added crunch)
Cooking spray or melted butter, for greasing the muffin tin
Directions:
Preheat the Oven: Set your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with cooking spray or brush each cup with melted butter.
Prepare the Mixture: In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, milk, chopped green onions or chives, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
