Ingredients
For the pretzels:
2 cups warm milk
1½ tablespoons yeast
¼ cup brown sugar
4 tablespoons butter, melted
2 teaspoons salt
4½ cups flour (more or less, as needed)
For the topping:
⅓ cup baking soda
3 cups warm water
4 tablespoons butter, melted
½ cup sugar
2 teaspoons cinnamon
Directions
In a large bowl or stand mixer, dissolve yeast in warm milk until bubbly. Add brown sugar, melted butter, one cup of flour, and salt; mix until combined.
Gradually add remaining flour, one cup at a time, until a smooth, slightly sticky dough forms. Cover and let rise for about 1 hour, until doubled.
Preheat oven to 450 °F (230 °C). Line two baking sheets with parchment paper. Divide dough into 12 pieces, roll each into a long rope, and shape into pretzels.
In a medium bowl, dissolve baking soda in warm water. Dip each pretzel into the baking soda bath and place on prepared sheets.
Bake for 7–11 minutes, until golden brown.
Meanwhile, whisk sugar and cinnamon in a shallow dish. Brush baked pretzels with melted butter, then dip or roll in cinnamon-sugar mixture. Serve warm
