Pan-seared salmon fillets are simmered in a velvety sauce made of garlic, butter, cream, and fresh lemon juice. 4 salmon fillets (skin-on or skinless, about 6 oz each)
Salt and pepper, to taste
2 Tbsp olive oil or butter
2 Tbsp unsalted butter
4 garlic cloves, minced
1 cup heavy cream
1/2 cup chicken broth (or dry white wine)
Juice of 1 large lemon (about 3 Tbsp)
1 tsp lemon zest
1/4 cup grated Parmesan cheese
1/4 tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
2 Tbsp chopped fresh parsley (for garnish)
Lemon slices (for garnish)
Prep the Salmon:
Pat salmon fillets dry with paper towels. Season both sides with salt and pepper.
Sear the Salmon:
Heat olive oil or butter in a large skillet over medium-high heat.
Place salmon fillets skin-side down and sear for 4–5 minutes, then flip and cook another 3–4 minutes until golden and cooked through.
Remove salmon and set aside on a plate.
Make the Sauce:
In the same pan, reduce heat to medium. Melt 2 Tbsp butter, then add minced garlic and sauté for 30 seconds until fragrant.
Pour in the chicken broth (or wine), and simmer for 2–3 minutes to reduce slightly.
Stir in heavy cream, lemon juice, lemon zest, Parmesan, red pepper flakes (if using), and a pinch of salt and pepper.
Simmer for 4–5 minutes until the sauce thickens slightly.
Combine and Serve:
Return the salmon to the skillet and spoon sauce over the top. Let simmer for 2 more minutes to warm through.
Garnish with chopped parsley and lemon slices. Serve immediately with rice, pasta, or steamed vegetables.
