1 generous cup peeled, cubed fresh peaches (about 1 large or 2 small)
2 tbsp granulated sugar
1/8 tsp vanilla extract
Pinch of ground nutmeg
Pinch of ground cinnamon
1 tbsp panko breadcrumbs
1/2 cup self-rising flour
(Optional bourbon syrup)
1/4 cup white sugar
2 tbsp water
1 tbsp bourbon whiskey
Toss peach cubes with sugar in a bowl. Cover and let sit 30 minutes at room temperature until juices release.
Heat oil in a deep fryer or large saucepan to 375 °F (190 °C).
Stir in vanilla, nutmeg, cinnamon, and panko with the peaches. Add self-rising flour and mix until fully moistened—no dry bits. Rest batter 3–5 minutes.
Spoon ~6 heaping tablespoons of batter into the hot oil. Fry for 90 seconds, flip and fry another 90 seconds, then turn and fry 1 more minute until golden.
