Ingredients:
For the Muffins:
2 cups all-purpose flour
½ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, melted
1 cup milk
1 large egg
1 teaspoon vanilla extract
For the Cinnamon Filling:
½ cup unsalted butter, softened
½ cup brown sugar
2 tablespoons ground cinnamon
For the Cream Cheese Glaze:
4 oz cream cheese, softened
½ cup powdered sugar
1–2 tablespoons milk
½ teaspoon vanilla extract
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Line a 12-cup muffin tin with paper liners or lightly grease the cups.
Prepare the Muffin Batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Be careful not to overmix to ensure tender muffins.
Make the Cinnamon Filling:
In a small bowl, mix together the softened butter, brown sugar, and cinnamon until smooth and well combined.
Assemble the Muffins:
Scoop about 2 tablespoons of muffin batter into each muffin cup.
Add a generous spoonful of the cinnamon filling on top of the batter in each cup.
Top with another 2 tablespoons of muffin batter, filling each cup almost to the top.
Using a toothpick or skewer, gently swirl the cinnamon filling into the batter to create a marbled effect.
Bake the Muffins:
Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Prepare the Cream Cheese Glaze:
In a medium bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
If the glaze is too thick, add more milk, one teaspoon at a time, until it reaches a drizzling consistency.
Glaze the Muffins:
Once the muffins have cooled completely, drizzle the cream cheese glaze over the top of each muffin.
Allow the glaze to set before serving.
