For the Meatballs:
500g ground chicken
1 egg
2 garlic cloves, minced
2 tablespoons parsley, finely chopped
1 tablespoon dill, finely chopped
1 tablespoon mint, finely chopped
Zest of 1 lemon
½ teaspoon dried oregano
¼ cup breadcrumbs
Salt and pepper, to taste
Olive oil, for cooking
Optional for Serving:
Tzatziki sauce
Pita bread or flatbread
Cucumber, tomato, and red onion salad
Crumbled feta cheese
In a large bowl, combine ground chicken, egg, garlic, chopped herbs, lemon zest, oregano, breadcrumbs, salt, and pepper. Mix until just combined.
Shape the mixture into small meatballs using damp hands.
Heat olive oil in a large skillet over medium heat. Add meatballs in batches and cook for 3–4 minutes per side until golden brown and cooked through.
Remove from heat and let rest for a couple of minutes.
Serve with your choice of tzatziki, warm pita, salad, or rice.
