4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 can (14 oz) full-fat coconut milk
1/2 cup chicken broth
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
1 tablespoon lime juice (optional)
Heat olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes per side until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.
In the same skillet, add the chopped onion and cook for 2-3 minutes until softened.
Add the minced garlic and grated ginger, cooking for another minute until fragrant.
Stir in the ground turmeric, cumin, and paprika, allowing the spices to toast lightly in the pan for 30 seconds.
Pour in the coconut milk and chicken broth, stirring to combine. Bring the mixture to a simmer.
Return the chicken breasts to the skillet and coat them with the sauce. Simmer for 5-7 minutes, letting the sauce reduce and thicken slightly.
Taste the sauce and adjust seasoning with additional salt and pepper if needed.
Remove from heat and stir in lime juice, if desired.
Garnish with fresh cilantro before serving.
