For Topping:
Whipped cream (store-bought or homemade)
Crushed Oreo cookies
Prepare the Cookie Crust:
Preheat your oven to 350°F (175°C).
Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a ziplock bag and smashing them.
Mix the crushed cookies with melted butter until well combined.
Line a muffin tin with cupcake liners.
Press about one tablespoon of the Oreo mixture into each liner to form a solid base.
Prepare the Cheesecake Filling:
In a mixing bowl, beat the softened cream cheese with granulated sugar until fluffy.
Add sour cream and mix until smooth.
Optional: Fold in mini chocolate chips for added texture.
Assemble and Bake:
Spoon dollops of the cheesecake filling onto each cookie crust until almost full.
Bake for 15-18 minutes, or until the centers are set but still slightly jiggly.
Allow the cups to cool completely before refrigerating.
Serve:
Once chilled, pipe whipped cream on top of each cup.
Sprinkle with crushed Oreo cookies for garnish.
Serve and enjoy!
