These Coconut Pineapple Bites are a delightful tropical treat that combines the sweetness of fresh pineapple with a crispy, golden coconut coating. Each bite is a burst of flavor, enhanced by a drizzle of coconut milk and sweetened condensed milk, and topped with toasted coconut flakes and a dusting of powdered sugar. Perfect for summer gatherings or as a sweet snack, these bites offer a delightful contrast of textures and flavors.
Ingredients:
1 fresh pineapple, cut into bite-sized pieces
1 cup sweetened shredded coconut
½ cup all-purpose flour
2 large eggs, beaten
¼ cup coconut milk
¼ cup sweetened condensed milk
¼ cup toasted coconut flakes (for garnish)
¼ cup powdered sugar (for dusting)
Vegetable oil (for frying)
Directions:
Set up three dipping stations: one with flour, one with beaten eggs, and one with shredded coconut.
Dip each pineapple piece into the flour, then into the beaten eggs, and finally coat with shredded coconut.
Heat vegetable oil in a deep frying pan to 350°F (175°C). Fry the coconut-coated pineapple pieces in batches for 2–3 minutes per side, or until golden brown. Drain on paper towels.
In a small bowl, mix coconut milk and sweetened condensed milk together. Drizzle this mixture over the fried pineapple bites.
Garnish with toasted coconut flakes and dust with powdered sugar. Serve warm and enjoy!
