Ingredients:
1 cup medjool dates, pitted
1/3 cup shredded carrots
1 cup walnuts
1 tablespoon chia seeds
1/3 cup shredded unsweetened coconut
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt
1 teaspoon vanilla extract
Extra shredded coconut for rolling
Directions:
Prepare Ingredients: If your medjool dates are firm, soak them in warm water for 10 minutes to soften them. Drain well before using.
Process Ingredients: In a food processor, combine dates, shredded carrots, walnuts, chia seeds, shredded coconut, cinnamon, nutmeg, salt, and vanilla extract. Pulse until the mixture is well combined and forms a sticky dough.
Form Balls: Using a spoon, scoop out portions of the mixture and roll them into balls about the size of a golf ball.
Coat Balls: Roll each ball in the extra shredded coconut to coat evenly.
Chill: Place the coated energy balls on a parchment-lined baking sheet or plate and refrigerate for at least 1 hour to firm up.
Serve: Enjoy these energy balls as a quick snack or dessert.
