4–6 boneless or bone-in pork chops (1‑inch thick)
2 tbsp olive oil
Salt & black pepper, to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 medium onion, thinly sliced
3 cloves garlic, minced
4 tbsp unsalted butter
4 tbsp all‑purpose flour
2 cups whole milk
1 cup chicken broth
½ cup heavy cream
½ tsp dried thyme
2 lb Yukon Gold or russet potatoes, thinly sliced
1½ cups shredded mozzarella or Gruyère cheese
2 tbsp fresh parsley, chopped (for garnish)
Preheat oven to 375 °F (190 °C).
Season pork chops with salt, pepper, garlic powder, onion powder, and paprika on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear pork chops 2–4 minutes per side until golden. Remove and set aside.
In the same skillet, melt butter and sauté onion ~5 min until soft; add garlic and cook 1 min.
Stir in flour, cooking 1–2 min to form a roux.
Gradually whisk in milk, chicken broth, and cream until smooth and simmering. Add thyme and season to taste.
Layer half the potatoes in skillet or transfer to a 9×13 dish; pour half the sauce over and sprinkle with half the cheese.
Nestle pork chops on top, then repeat layering with remaining potatoes, sauce, and cheese.
Cover with foil and bake 45 min; remove foil and bake 15–25 min more until bubbly and golden.
