1½ lb boneless, skinless salmon fillet
Salt and pepper, to taste
8 cups baby spinach
¼ cup chopped onion (or scallions)
1 tbsp olive oil
1 cup ricotta cheese
⅓ cup crumbled feta cheese
2 tbsp chopped fresh dill
2 tsp lemon zest
1 sliced green onion
1 tsp garlic powder (or 1 clove fresh garlic)
1 large egg, beaten
Season salmon with salt and pepper.
Sauté onion in ½ tbsp olive oil until soft. Add garlic and cook briefly.
Add spinach and cook until wilted. Let cool slightly.
In a bowl, mix ricotta, feta, dill, lemon zest, green onion, garlic, and egg. Fold in spinach.
Spread filling over salmon, roll tightly, and wrap in parchment. Freeze 1 hour to firm.
Preheat oven to 400 °F (200 °C). Line baking sheet with parchment.
Slice roll into 6 pinwheels. Place on sheet and brush with remaining olive oil.
Bake 18–20 minutes, until salmon is cooked through and filling is set.
