Ingredients:
For the Meatloaf:
2 pounds ground beef
1 cup breadcrumbs
1/2 cup finely chopped onion
2 cloves garlic, minced
2 large eggs
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
For the Loaded Potato Topping:
3 large potatoes, peeled and cubed
1/2 cup shredded cheddar cheese
1/4 cup sour cream
3 tablespoons butter
1/4 cup milk
Salt and pepper to taste
Optional: cooked bacon bits and chopped green onions for garnish
Directions:
Preheat the oven to 350°F (175°C).
In a large pot, boil the cubed potatoes until tender, about 15 minutes. Drain and mash with butter, sour cream, milk, salt, and pepper until smooth and creamy. Stir in the shredded cheddar cheese. Set aside.
In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined.
Transfer the meat mixture to a greased loaf pan, shaping it into a loaf.
Spread the cheesy mashed potatoes evenly over the top of the meatloaf.
