1 tbsp butter
1 tbsp olive oil
2 lb chicken tenderloins
Salt and black pepper, to taste
½ medium onion, diced
3 garlic cloves, minced
½ cup chicken broth
1 cup heavy cream
2 tsp dried Italian seasoning
½ cup grated Parmesan cheese
½ cup roasted red peppers, sliced
½ cup pepperoncini peppers, sliced
¼ tsp crushed red pepper flakes (optional)
Heat butter and olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden brown on all sides, about 5–8 minutes. Remove and set aside.
In the same skillet, add onion and sauté for 3 minutes until softened. Add garlic and cook for 1–2 more minutes.
Pour in chicken broth, scraping up browned bits, and simmer until reduced by half.
Remove from heat and stir in heavy cream and Italian seasoning. Return to heat and whisk until smooth.
Add Parmesan, roasted red peppers, pepperoncini, and red pepper flakes. Stir until cheese melts and sauce is creamy.
Return chicken to skillet and simmer for 5 minutes until heated through.
Serve over rice or pasta, and enjoy!
