Ingredients:
2 English muffins, split
2 large eggs
1/2 cup shredded mozzarella cheese
1/4 cup cooked bacon, sausage, or ham (optional)
1/4 cup diced bell peppers or tomatoes (optional)
Salt and pepper, to taste
Fresh basil or parsley, for garnish (optional)
Directions:
Preheat oven to 375°F (190°C).
Toast English muffin halves until lightly golden. Place on a baking sheet.
In a non-stick skillet, cook eggs to your preference (fried, scrambled, or poached). Season with salt and pepper.
