2 pork tenderloins (about 1 lb each)
1 tsp garlic powder
1 tsp sweet paprika
1 tsp onion powder
1 tsp dried thyme
1 tsp kosher salt
½ tsp ground black pepper
2 Tbsp extra virgin olive oil
Honey Garlic Sauce
½ cup honey
¼ cup tamari soy sauce (or coconut aminos)
2 Tbsp apple cider vinegar
6 garlic cloves, minced
Preheat oven to 375 °F (190 °C). In a small bowl, mix garlic powder, paprika, onion powder, thyme, salt, and pepper.
In another bowl, whisk together honey, soy sauce, vinegar, and minced garlic. Set aside.
Rub the spice blend all over the pork tenderloins.
In an oven-safe skillet, heat the olive oil over medium‑high. Sear the pork, turning occasionally, until browned on all sides (~4 minutes total).
Turn off the heat, pour the sauce over the pork, and turn the tenderloins to coat them. Then transfer the skillet to the oven. Roast for 15–20 minutes or until an instant-read thermometer reads 140 °F (60 °C).
Remove pork to a plate, cover with foil, and let rest for 5–10 minutes.
While resting, simmer the pan sauce for 1–2 minutes to thicken.
Slice pork into ½‑inch rounds, arrange on a platter, and drizzle with the reduced sauce. Serve warm.
