1 cup long-grain white rice
2 tablespoons olive oil
1 small onion, chopped
1 tablespoon minced garlic
2 cups chicken broth
8 ounces tomato sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
1 teaspoon dried cilantro
1 pound sirloin steak, sliced
2 tablespoons butter
Montreal steak seasoning, to taste
White queso (such as Pancho’s)
Fresh cilantro, chopped
Flour tortillas (optional)
Rinse the rice under cold water until the water runs clear.
In a large skillet, heat olive oil over medium-high heat.
Add the rice to the skillet and stir continuously until it begins to brown slightly.
Add the chopped onion and minced garlic to the skillet, sautéing until the onion becomes translucent.
Pour in the chicken broth and tomato sauce, stirring to combine.
Season with salt, pepper, cumin, and dried cilantro.
Bring the mixture to a boil, then reduce the heat to low.
Cover the skillet and let it simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
While the rice is cooking, heat a separate skillet over medium-high heat and melt the butter.
Add the sliced sirloin steak to the skillet, seasoning with Montreal steak seasoning.
Cook the steak until it reaches your desired level of doneness, then remove from heat and set aside.
Once the rice is cooked, fluff it with a fork.
Top the rice with the cooked steak slices.
Drizzle the white queso over the steak and rice.
Garnish with chopped fresh cilantro.
Serve with warm flour tortillas, if desired.
