Ingredients:
12 ounces rotini pasta (or your preferred pasta)
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/2 cup black olives, sliced
1/2 cup pepperoncini peppers, sliced
1/4 cup cucumber, chopped
1 cup mozzarella cheese, cubed
1/4 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped (for garnish)
For the Dressing:
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon sugar
Salt and pepper, to taste
Directions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions, until al dente. Drain and rinse the pasta under cold water to stop the cooking process. Set aside to cool.
Prepare the Vegetables:
While the pasta is cooling, slice the cherry tomatoes, red onion, black olives, and pepperoncini peppers. Chop the cucumber and set everything aside.
Make the Dressing:
In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, Italian seasoning, sugar, salt, and pepper. Taste and adjust seasoning as needed.
Assemble the Salad:
In a large bowl, combine the cooled pasta with the prepared vegetables, mozzarella cheese, and Parmesan cheese. Pour the dressing over the salad and toss everything together until well coated.
Chill and Serve:
