Light, whimsical, and bursting with fruity flavor, these Easy Jello Meringue Cookies are a playful twist on traditional meringues. Featuring just a handful of pantry ingredients—egg whites, sugar, and any flavor of Jello—you can whip up a batch in no time. They're naturally gluten-free, delightfully crisp, and perfect for adding a splash of color and sweetness to holiday tables or everyday moments.
4 eggs, whites only (room temperature)
1 cup granulated sugar
3 tablespoons flavored Jello powder (any flavor)
Dash of salt
Preheat the oven to around 200 °F (93 °C).
In a clean, dry bowl, beat the egg whites until foamy. Add sugar slowly while continuing to beat.
Mix in the Jello powder, salt, and cream of tartar; continue beating until stiff, glossy peaks form.
Drop spoonfuls (or pipe shapes) onto a parchment-lined baking sheet.
Bake for 90 minutes. After baking, turn off the oven and leave the meringues inside for several hours—or overnight—to dry completely.
