1 pound extra-lean ground beef
½ medium onion, chopped
2 heaping tablespoons tomato paste
½ teaspoon garlic powder
½ teaspoon chili powder
3 cups beef broth
1 cup uncooked elbow macaroni
2 cups freshly grated cheddar cheese
Salt and pepper to taste
Add the ground beef and chopped onion to a large pot. Cook over medium-high heat for about 7-10 minutes, breaking up the beef as it browns. Drain any excess fat.
Stir in the tomato paste, garlic powder, and chili powder, allowing the spices to cook for about 1 minute.
Pour in the beef broth, increase the heat to high, and bring it to a boil.
Once boiling, add the uncooked macaroni. Reduce the heat to a simmer and cook uncovered for about 13-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has absorbed.
Grate the cheddar cheese while the pasta cooks. Once the pasta is done, remove the pot from the heat and stir in the cheese until melted and creamy. Season with salt and pepper to taste.
Let the dish sit for a couple of minutes to absorb any remaining sauce before serving.
