BLT Pasta Salad is a fresh and flavorful twist on the classic bacon, lettuce, and tomato sandwich. This salad combines crispy bacon, juicy tomatoes, crunchy lettuce, and tender pasta tossed in a creamy dressing. Ingredients:
8 ounces rotini or your favorite pasta
8 slices bacon
2 cups cherry tomatoes, halved
3 cups chopped romaine lettuce
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon garlic powder
Salt and pepper, to taste
Directions:
Cook pasta according to package instructions until al dente. Drain and rinse with cold water; set aside.
In a skillet, cook bacon over medium heat until crisp. Drain on paper towels and crumble once cooled.
In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper to make the dressing.
Add pasta, bacon, cherry tomatoes, and romaine lettuce to the bowl. Toss gently to combine and coat everything evenly with the dressing.
Refrigerate for at least 30 minutes before serving to allow flavors to meld.
