1 9-inch pie crust (homemade or store-bought)
4 large eggs
1 cup whole milk (or half-and-half for creamier texture)
4 oz goat cheese, crumbled
1 small onion, caramelized (optional)
1 cup fresh spinach (optional)
½ cup roasted red peppers, chopped (optional)
1 tsp fresh thyme (or ½ tsp dried)
½ tsp salt
¼ tsp black pepper
Preheat oven to 375°F (190°C).
Place pie crust into a 9-inch pie dish. If desired, blind bake for 10 minutes to prevent sogginess.
Layer goat cheese, caramelized onions, spinach, and roasted peppers evenly in the crust.
In a bowl, whisk eggs, milk, thyme, salt, and pepper until smooth. Pour over filling.
Bake 35–40 minutes until quiche is set and lightly golden on top.
Allow to cool for 10 minutes before slicing and serving.
