Ingredients:
10 slices bacon
2 jalapeños, seeded and finely diced
8 oz cream cheese, softened
1 cup shredded cheddar cheese
8 egg roll wrappers
Vegetable oil (for frying)
Optional: ranch dressing or jalapeño jelly for dipping
Directions:
Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet, drain on paper towels, and crumble into small pieces.
Prepare the Filling: In a bowl, combine the crumbled bacon, diced jalapeños, softened cream cheese, and shredded cheddar cheese. Mix until well blended.
Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the side corners, and roll tightly, sealing the edge with a little water.
Heat the Oil: In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
Fry the Egg Rolls: Carefully place the egg rolls into the hot oil, a few at a time, and fry until golden brown and crispy, about 2–3 minutes per side. Remove and drain on paper towels.
Serve: Serve the egg rolls hot with ranch dressing or jalapeño jelly for dipping.
