Er zijn zo van die planten, waar wetenschappelijk weinig mee gedaan wordt, maar waar de mensen des te meer gebruik van maken. Mierikswortel is er zo eentje. Mierikswortel, Armoracia rusticana Gilib., vroeger Cochlearia armoracia en Armoracia lapathifolia Gilib. genoemd, is een winterharde, overblijvende plant uit de mosterdfamilie.
De plant vormt dikke, witte, vlezige, cylindervormige wortels, die, als men ze schraapt of kneust, hun karakteristieke, bijzonder scherpe, doordringende geur en etherische oliën afscheiden.
Deze scherpe geur wordt veroorzaakt door het glycoside sinigrine, die door enzymwerking uiteenvalt, waardoor een scherpe vluchtige olie vrijkomt, die zwavel bevat en qua smaak en eigenschappen op mosterdolie lijkt. De ongebroken wortels hebben geen geur.

De soortnaam Cochlearia is afgeleid van het Latijnse cochlea, een slak met een spiraalvormig huisje, dat lijkt op een lepel; de bladeren van vele soorten chochlearia zijn namelijk hol als de kom van een lepel. De bekendste is dan ook het Lepelblad, Cochlearia officinalis. Dodonaeus beschrijft het ‘Dat Wildt gheslacht heet in Griecx Raphanos agrios. In Latijn Armoracia ende Raphanus sylvestris/ van sommighen Raphanus montanus. In Hoochduytsch Meerrettich und Kern. In Brabant meest Raphanus/ van sommighen oock Meerradijs. In Franchois Rafain ou Raifort sauvage.
Geschiedenis van mierikswortel.
Dioscurides en Plinius beschrijven de mierikswortel onder Thlaspi of Persicon, de Renaissance herbalisten Matthiolus en Gerard onder Raphanus, Linnaeus onder Cochlearia en hedendaags wordt de geslachtsnaam Armoracia gebruikt. Door die naamswisselingen is het niet altijd duidelijk welke plant in de Oudheid mierikswortel was. Hij lijkt niet vermeld te zijn door Apicius, de Romeinse epicurist uit de eerste eeuw n. C., hoewel zijn uitvoerige verhandelingen over koken vol staan met allerlei andere kruiden en toekruiden. In de dertiende eeuw had de mierikswortel zich in elk geval een plaats verworven in West-Europa, waar hij vooral in Duitsland en Denemarken gebruikt werd als geneesmiddel en als toekruid. In de middeleeuwen at men in Duitsland de bladeren van deze plant als groente en tot op de dag van vandaag worden de fijngesneden zachte jonge bladeren aanbevolen als een gezonde, smakelijke toevoeging aan groene sla. In Engeland kende men mierikswortel tegen het midden van de zestiende eeuw als „red cole". In zijn Herball vertelt John Gerard, dat dit een toekruid was, dat de Duitsers bij vis en vlees aten. De eerste kolonisten brachten de plant over naar Amerika en in 1806 werd zij door McMahon opgenomen in zijn lijst van eetbare Amerikaanse tuinplanten.

Historique
Le raifort provient très probablement de l’Europe de l'Est et de l’Asie Mineure. Il était populaire chez les Grecs et les Romains bien avant l’ère chrétienne en raison de ses vertus médicinales. Sa haute teneur en vitamine C en faisait un aliment de choix contre le scorbut, une maladie qui se caractérise par une forte carence en vitamine C. Il est actuellement utilisé comme condiment en cuisine dans les pays d’Europe centrale et du Nord, ainsi qu’en Alsace.
Ingrédients du raifort
Le raifort contient des sels minéraux (calcium, sodium, potassium, phosphore, magnésium, soufre), des oligo-éléments (fer, cuivre), des acides (chlorhydrique, phosphatique, carbonique, sulfurique) et des vitamines (C, B2, B3 et B6). Les ingrédients responsables de la saveur piquante du raifort sont les glucosinolates, des composés apparentés aux glucides. Sous l'action d'un enzyme appelée myrosinase, les glucosinolates sont transformés en composés actifs tels que les isothiocyanates, également appelés « huile de moutarde », et qui possèdent des propriétés antibactériennes, antifongiques et anticancéreuses1-6.
Recherches
Les recherches sur le raifort sont très limitées et ont porté sur les propriétés antibactériennes du raifort.
Bronchite. Une étude allemande portant sur plus de 1500 enfants de 4 ans et plus a examiné l'efficacité d'une extrait de plantes (Angocin Anti-Infekt N) contenant des racines de raifort et de capucine, comparée à celle d'un antibiotique standard. 634 ont souffert d'une bronchite durant l’étude. Suite au traitement avec l’extrait de plante, les symptômes reliés à la bronchite ont diminué de l'ordre de 80%, un effet semblable à celui obtenu par l'antibiotique testé dans l'étude. En outre, les chercheurs ont remarqué une fréquence moins élevée d’effets secondaires avec l’extrait de raifort7,8.
Sinusite. Le raifort pourrait également avoir une activité antibiotique lorsqu’il est combiné avec d'autres plantes pour traiter la sinusite. Dans l’étude citée plus haut, les auteurs ont également rapporté, en se basant sur plus de 536 cas de sinusites, que l'extrait de plantes (Angocin Anti-Infekt) réduisait tout autant qu'un antibiotique classique les symptômes liés à une sinusite. De même, les effets secondaires étaient moins fréquents avec l’extrait de plante7,8.
Infection des voies urinaires. Cette même étude allemande a montré que les 479 patients ayant souffert d'une infection des voies urinaires ont vu leurs symptômes réduits de 81% après un traitement avec l'extrait Angocin Anti-Infekt N, réduction dont l'ampleur est semblable à celle de l'antibiotique qui est de 88%7,8. Une autre étude publiée en 2011 a démontré que les ingrédients du raifort possèdent les mêmes propriétés que les pesticides synthétiques, corroborant l’hypothèse que le raifort serait utile dans le traitement des infections des voies urinaires9.
Cancer. Plusieurs études chez l'animal ont révélé que les ingrédients du raifort ont des propriétés anti-cancéreuses. C'est le cas en particulier des glucosinolates et de ses composés actifs appelés isothiocyanates4-6. Aucune étude clinique n'a été menée à ce jour.
Autres usages
Traditionnellement, le raifort était utilisé pour soigner les rhumatismes et les douleurs articulaires, notamment au Moyen Âge.
Précautions / Attention
L'agence de santé américaine Food and Drug Administration considère que le raifort est un aliment sans danger lorsqu'il est utilisé en cuisine. Des cas d'intoxication sur le bétail ont été rapportés chez des porcs ayant consommé des racines de raifort à raison de 1 % de leur poids corporel. Les symptômes incluent une inflammation des muqueuses de l'estomac suivie de la mort10.
Contre-indications
Le raifort est à éviter :
Chez les sujets présentant une allergie ou une hypersensibilité connue au raifort et à ses ingrédients.
Chez les femmes enceintes ou qui allaitent, car les glucosinolates, pouvant être excrétés dans le lait maternel ou le placenta, présenteraient alors un risque de toxicité.
Précautions
Le raifort est à utiliser avec précautions chez les patients :
ayant une pression artérielle basse ;
prenant des médicaments anti-inflammatoires ;
qui suivent un traitement contre le cancer ;
prenant des hormones thyroïdiennes.
Effets indésirables
Les quelques effets secondaires rapportés sont les suivantes : irritation de l'estomac, de l'œsophage et des voies urinaires, troubles gastro-intestinaux, nausées et vomissements et irritation de la bouche et du pharynx.
Interactions
Avec des plantes ou des suppléments
Le raifort pourrait potentialiser les propriétés antibactériennes de certaines plantes.
Le raifort pourrait aggraver le risque de saignement s'il était combiné avec des plantes connues pour augmenter le risque d’hémorragie (ex : l’extrait de Ginkgo biloba).
Le raifort pourrait augmenter les effets de certaines plantes ayant des propriétés anti-inflammatoires, car il inhibe une enzyme de l’inflammation appelée cyclo-oxygénase 111.
Le raifort pourrait avoir des effets additifs lorsqu'il est combiné avec d'autres plantes ou compléments alimentaires contenant de la vitamine C.
Interaction avec des médicaments
Le raifort pourrait avoir des effets additifs avec les médicaments suivants : antibiotiques, aspirine, anticoagulants (warfarine ou l'héparine), antiplaquettaires (ex. clopidogrel, Plavix®) et anti-inflammatoires non stéroïdiens (ibuprofène, naproxène), anti-hypertenseurs, diurétiques et médicaments anticancéreux.
Le raifort pourrait interagir avec des médicaments qui modulent la production d’hormones thyroïdiennes.

History and Traditional Us
Range and Habitat
Horseradish is a hardy perennial native to southeastern Europe and western Asia. Today, it is grown in the temperate regions of Europe, Asia, and North and South America, as well as some parts of Africa and New Zealand.1 The plant grows in clumps with bright green leaves that radiate out from the main taproot, which is cultivated as a food ingredient.2 Small, white, four-petaled flowers grow from a stalk that can reach two to three feet or higher when flowering.2 Young leaves two to three inches in length also can be harvested for use in salads.3
Horseradish is easy to cultivate and often will continue to thrive even during periods of neglect.4 While technically a perennial, it is best treated as an annual or biennial crop due to the root’s tendency to become woody and unpalatable with age. Once established, horseradish grows well in full sun and slightly moist soil.1
Phytochemicals and Constituents
Glucosinolates, sulfur-containing secondary metabolites, give horseradish its characteristic spicy flavor.5 Horseradish contains eight different glucosinolates, of which sinigrin, gluconasturtiin, glucobrassicin, and neoglucobrassicin are the most common.5 Once inside the body, glucosinolates are broken down into powerful derivatives called isothiocyanates and indoles, which are believed to be the main cancer-preventive constituents of horseradish and other cruciferous vegetables (i.e., vegetables of the family Brassicaceae).1,6
Horseradish also contains minerals such as phosphorous, calcium, magnesium, and potassium.7 Freshly grated roots contain minimal fat, are low in calories, and rich in vitamin C. Cooking horseradish can strip it of its nutritional value, so it is best used fresh.1
Historical Uses
Horseradish root has been ground into a spice, prepared as a condiment, and used medicinally for more than 3,000 years. It was used topically by both the Greeks and Romans as a poultice to ease muscle pain, such as back aches and menstrual cramps.3 Internally, it was used to relieve coughs and as an aphrodisiac.4 Starting in the Middle Ages (ca. 1000-1300 CE), horseradish was incorporated into the Jewish Passover Seder as one of the maror, or bitter herbs.3 In the 16th century, Europeans began using horseradish in sauces and condiments as well as for its medicinal applications.
Historically, horseradish was used to treat a wide variety of illnesses including asthma, coughs, colic, toothache, and scurvy (due to its vitamin C content). Grated horseradish poultices were used to ease pain associated with gout and sciatica, and also were infused in milk to clarify the skin and remove freckles.3 Currently, horseradish is consumed regularly in the form of ready-to-use sauces and dips.2 In 2005, the Horseradish Information Council reported that in the United States, 24 million pounds of horseradish roots were processed into six million gallons of prepared horseradish sauce.3
Modern Research & Uses
The chemoprotective role of horseradish’s gluconsinolate content against various types of cancers in humans has been widely studied.8,9 A hydrolyzed form of the glucosinolate sinigrin has been shown to suppress the growth of cancerous tumors in vitro and protect against further DNA damage.9,10 One hypothesis is that glucosinolates may work by enhancing the liver’s ability to detoxify carcinogens.10 Using a rat model, researchers found that sinigrin affects many organs involved in carbohydrate and lipid metabolism, including the liver, pancreas, and intestine.11 Sinigrin also reduced lipid levels in the blood, suggesting that it could be beneficial in reducing elevated triglyceride levels after meals, a risk factor for coronary artery disease.11
Horseradish also contains allyl isothiocyanate, which is a well-recognized antimicrobial agent against a variety of organisms including pathogens like Escherichia coli (E. coli), a common food-borne pathogen, and Helicobacter pylori (H. pylori), a bacteria known to cause stomach ulcers and increase the risk for gastric cancer.12 Due to its antibiotic properties, horseradish can be used to treat urinary tract infections and destroy bacteria in the throat that can cause bronchitis, coughs, and other related problems.13 In a recent study, isothiocyanates extracted from horseradish showed antimicrobial activity against ten different oral microorganisms.14 Although broccoli (Brassica oleracea var. italica), Brussels sprouts (B. oleracea var. gemmifera), and other cruciferous vegetables also contain these compounds, horseradish has up to ten times more glucosinolates than other members of the family Brassicaceae.10
Horseradish root was approved as a nonprescription medicine ingredient by the German Commission E for treatment of infections of the respiratory tract and as supportive treatment in urinary tract infections.13 In the United States, horseradish root is the active ingredient of Rasapen, a urinary antiseptic drug.13 Horseradish is considered a strong diuretic and, coupled with its antibacterial properties, acts to flush out harmful bacteria or other inflammatory agents in the bladder sooner than they normally would be eliminated.10
Isothiocyanates in horseradish root are released when hydrolyzed by other active enzymes, which are activated only when the root is scratched.15 Fumes released from grating or cutting the root can irritate the membranes of the eyes and nose, and therefore horseradish should be prepared in a well-ventilated room and care should be taken in its use.

Ingredients:
· 8 cups torn kale leaves
· 2 tablespoons freshly grated horseradish
· 1 medium shallot, minced
· 1/2 teaspoon freshly ground pepper
· 1/4 teaspoon kosher salt
· 2 cups shredded cooked potatoes
· 3 tablespoons extra virgin olive oil
Directions:
1. Place kale in a large microwave-safe bowl, cover, and microwave until wilted, about 3 minutes. Drain, cool slightly, and finely chop.
2. Meanwhile, mix horseradish, shallot, pepper, and salt in a large bowl. Add the chopped kale and potatoes; stir to combine.
3. Heat oil in a large nonstick skillet over medium heat. Add the kale mixture, spread into an even layer, and cook, stirring every 3 to 4 minutes and returning the mixture to an even layer, until the potatoes begin to turn golden brown and crisp, 12 to 15 minutes total.
