1 lb spicy Italian sausage
1 tablespoon olive oil
4 medium potatoes, sliced thinly
1 medium onion, diced
4 cloves garlic, minced
4 cups chicken broth
2 cups kale, chopped
1 cup heavy cream
Salt and pepper to taste
Crushed red pepper flakes (optional, for extra heat)
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.
