8 chicken thighs (skinless and boneless)
2 tbsp cornflour (cornstarch)
½ tsp salt
½ tsp pepper
2 tbsp vegetable oil
1 tbsp unsalted butter
4 cloves garlic, minced
110 g (⅓ cup) honey
80 ml (⅓ cup) chicken stock
1 tbsp rice vinegar
1 tbsp light soy sauce
To serve: 1 tbsp finely chopped fresh parsley, ½ tsp chili flakes, boiled rice
In a bowl, toss chicken thighs with cornflour, salt, and pepper until evenly coated.
Heat vegetable oil in a frying pan over medium-high heat. Add the chicken thighs and cook for 4-5 minutes on one side until golden brown. Flip and cook for another 2 minutes.
Add butter to the pan, then add minced garlic and cook for 1 minute.
In a bowl, mix honey, chicken stock, rice vinegar, and soy sauce. Pour the sauce into the pan with the chicken and bring to a boil.
Simmer the sauce for 4-5 minutes until thickened and the chicken is cooked through.
