Taco Meatloaf is a cheesy, flavorful twist on the classic meatloaf, combining lean ground beef with crushed Fritos, salsa, taco seasoning, and melted cheese. This hearty and satisfying dish is perfect for family dinners, offering a delicious combination of taco flavors with the comfort of a traditional meatloaf.
6 oz corn chips (Fritos)
2 lbs lean ground beef
2 large eggs
1 ½ cups corn and black bean salsa (or chunky salsa)
1 oz taco seasoning
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 cups shredded Mexican cheese blend
Preheat the oven to 350°F (175°C).
Place the Fritos corn chips into a Ziploc bag and crush them with a rolling pin.
In a large mixing bowl, combine the ground beef, eggs, crushed corn chips, salsa, taco seasoning, salt, pepper, and garlic powder. Use your hands to mix until well combined.
Add 1 cup of shredded cheese to the meat mixture and mix it in thoroughly.
Line a 9x5 inch loaf pan with aluminum foil and spray it with cooking spray.
Press the meat mixture into the prepared loaf pan.
Spread the remaining salsa evenly on top of the meat mixture.
Bake the meatloaf in the preheated oven for 40 minutes.
After 40 minutes, sprinkle the remaining shredded cheese on top of the salsa.
Return the meatloaf to the oven and bake for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
Remove the meatloaf from the oven and let it rest for 5 minutes.
Use the foil to lift the meatloaf out of the pan. Slice and serve.
