1 tablespoon olive oil
8 ounces yellow potatoes, diced
1 medium yellow onion, chopped
1 jalapeno pepper, chopped
1 serrano pepper, chopped (optional for more heat)
2 cloves garlic, chopped
1 pound ground beef (or chicken, turkey, pork)
2 large tomatoes, chopped
3/4 cup beef stock (or chicken/vegetable stock)
1 tablespoon paprika
1 tablespoon Mexican oregano
1 teaspoon cumin
Salt and pepper, to taste
For Serving:
Cooked rice or warmed tortillas
Sliced peppers, chili flakes, fresh lime juice, hot sauce
Heat olive oil in a large pan over medium heat. Add potatoes, onion, and peppers and cook for 5 minutes to soften.
Add garlic and ground beef; break up beef and cook for 5 minutes until browned but not fully cooked.
Stir in tomatoes, beef stock, and seasonings. Bring to a boil, then reduce heat to simmer.
Simmer for about 20 minutes until potatoes are tender and meat is fully cooked. Adjust salt and pepper to taste.
