Ingredients:
1 ½ lb large raw shrimp, peeled and deveined (about 15-20 shrimp)
1 tsp chili powder
¼ tsp salt (to taste)
2 tbsp olive oil
For the Creamed Corn:
2 tbsp salted butter
½ cup chopped onion
5 cloves garlic, minced
1 ½ cups cooked corn kernels (from 2 ears of grilled or boiled corn)
1 tsp smoked paprika
1 cup half-and-half
4 oz feta cheese (preferably block feta, crumbled)
2 small limes (for juice and garnish)
Fresh cilantro (for garnish)
Directions:
Heat a large (12-inch) high-sided skillet over medium heat. Add olive oil.
Season shrimp with chili powder and salt, then cook in the hot skillet for 3-4 minutes, flipping once, until the shrimp turn pink. Remove from the skillet and set aside.
In the same skillet, melt butter and add chopped onion. Cook for 3 minutes, stirring occasionally, until softened.
Add minced garlic and cook for another 2 minutes, making sure not to burn the garlic.
Stir in cooked corn and smoked paprika.
