Ingredients:
1 lb (450g) extra large shrimp, peeled and deveined
1 lime (zested and juiced)
3 tablespoons unsalted butter, divided
2 tablespoons minced garlic (about 6 cloves)
1/2 teaspoon ground coriander (optional)
2 scallions, chopped
1/2 cup fresh cilantro leaves and tender stems, chopped
Salt and freshly ground black pepper, to taste
Directions:
Pat the shrimp dry and season with 1/4 teaspoon salt and freshly ground black pepper.
Zest the lime using a microplane and set aside. Cut the lime in half for the juice.
Heat 1 tablespoon of butter in a wide skillet over medium heat. Add the garlic and coriander (if using) and cook for about 1 minute, stirring frequently, until the garlic becomes fragrant.
Add the shrimp to the skillet in one layer. Cook for 1 minute, then flip the shrimp to cook on the other side until opaque, about 1-2 minutes more.
Stir in the chopped scallions and lime zest. Continue cooking, stirring occasionally, until the shrimp are fully cooked.
Remove the skillet from the heat and add the remaining butter, lime juice, and fresh cilantro. Stir until the butter melts and the sauce becomes creamy.
Taste and season with salt and pepper as needed. Serve with extra lime wedges for garnish.
