This Mini BBQ Bacon Cheddar Meatloaf recipe features smoky barbecue glazed meatloaves packed with cheesy bacon goodness. Made in half the time of a traditional meatloaf, these individual serving portions are perfect for a meal any day of the week.
2 pounds lean ground beef
6 ounces chili sauce
4 slices thick bacon, cooked and crumbled
1 ½ cups shredded sharp cheddar or cheddar blend cheese
½ cup panko breadcrumbs
2 large eggs, beaten
1 teaspoon onion powder
1 teaspoon seasoned salt
1 teaspoon granulated garlic
2 tablespoons Worcestershire sauce
1 teaspoon yellow mustard
½ cup prepared BBQ sauce
Preheat the oven to 425°F (220°C).
Cook and crumble the bacon.
In a large mixing bowl, combine the ground beef, chili sauce, crumbled bacon, shredded cheese, panko breadcrumbs, eggs, onion powder, seasoned salt, granulated garlic, Worcestershire sauce, and yellow mustard.
Divide the mixture into 8 round loaves. Press a small depression into the middle of each meatloaf.
Brush BBQ sauce over the top of each meatloaf.
Bake for 25 minutes. Turn on the broiler and brown the BBQ sauce for 2 to 5 minutes.
Let rest for 5 minutes before serving.
