Ingredients:
For the Pancake Batter:
1 ½ cups (180g) all-purpose or spelt flour (or gluten-free flour)
1 tbsp (15g) vegan protein powder (optional)
1 ½ tsp baking powder
½ tsp baking soda
2 tbsp sugar or syrup
½ tsp salt
1 cup (240ml) soy milk (or any dairy-free milk)
2 tsp apple cider vinegar or lemon juice (to create vegan buttermilk)
1 tsp vanilla extract
Oil for frying

Vegan chocolate chips or chopped nuts
Vegan butter or nut butter
Maple syrup or other syrup
Fresh strawberries or other fruits
Directions:
In a measuring jar, pour the soy milk and stir in the apple cider vinegar. Set it aside for about 5 minutes to create vegan buttermilk.
In a bowl, whisk together the flour, vegan protein powder (if using), baking powder, baking soda, sugar, and salt.
Stir the vanilla extract into the vegan buttermilk. Then, add the dry ingredients to the wet mixture and stir until combined. If needed, add more milk to adjust the consistency.
Heat a large non-stick pan or crêpes maker over medium heat and lightly grease with oil.
Transfer the batter into a piping bag or squeeze bottle. Pipe small mini pancakes onto the hot pan. Cook for 30-45 seconds, or until small bubbles form on top. Flip and cook for an additional 30 seconds until both sides are golden-brown.
