Ingredients:
2 lbs potatoes, peeled and cubed
1 tablespoon olive oil
2 large onions, thinly sliced
4 tablespoons butter
1/2 cup milk (warm)

Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.
While potatoes are cooking, heat olive oil in a skillet over medium-low heat.
Add sliced onions and cook slowly, stirring occasionally, until golden brown and caramelized (about 30-40 minutes).
In a large bowl, mash the potatoes with butter and warm milk until smooth and creamy.
Stir in caramelized onions, reserving a few for garnish if desired.
