This bacon wrapped mini meatloaf recipe is a delicious twist on the classic meatloaf, combining ground pork and beef formed into individual portions wrapped in bacon. It’s quick to make, freezer-friendly, and perfect for family dinners or entertaining guests.
3/4 pound lean ground beef
3/4 pound lean ground pork (or all beef if preferred)
1 medium onion, diced
1 egg
1 cup panko bread crumbs
1 cup milk
Salt and pepper, to taste
8 slices bacon
In a large bowl, mix together ground meat, onion, egg, bread crumbs, salt, pepper, and milk using clean hands until well combined.
Divide the mixture into 8 equal portions and shape each into a mini meatloaf on a baking sheet.
Cut each bacon slice in half. Arrange each half in a criss-cross pattern over each mini meatloaf and tuck the ends underneath.
Bake at 350°F (175°C) for 50 minutes.
For extra crispy bacon, broil for 3-5 minutes at the end, watching carefully to avoid burning.
Remove from oven, let rest briefly, and serve.
