This Fresh Cucumber Caprese Salad is a light and refreshing dish perfect for summer. 2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon dried oregano
1 tablespoon dried basil
Pinch salt
Pinch pepper
1 cucumber, peeled, fork-scored, thinly sliced, then diced
1½ cups cherry tomatoes, quartered
8 oz fresh mozzarella, sliced or pearl-sized
½ large red onion, chopped
In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Set aside.
Peel cucumber and score it with a fork to create texture. Thinly slice and dice the cucumber, then place in a bowl.
Quarter cherry tomatoes and add to the bowl with cucumber.
Thinly slice and dice red onion, then add to the bowl.
Add mozzarella pieces to the bowl and mix all ingredients gently to combine evenly.
