This Biscuits and Chorizo Gravy recipe is a fun and flavorful twist on a classic breakfast favorite. 10 biscuits (homemade or store-bought)
2 (9-ounce) tubes of Cacique pork chorizo
½ medium white or yellow onion, finely diced
3 tablespoons all-purpose flour
2 ½ cups whole milk
Prepare biscuits according to package instructions or your preferred recipe.
While the biscuits are baking, heat a large sauté pan over medium-high heat. Add the chorizo and break it apart with a spatula. Once it begins to brown, add the diced onions and cook for 7 minutes, until the chorizo is browned.
Stir in the flour and cook for another minute, stirring occasionally.
Reduce heat to medium-low, then add the milk, and simmer for 5-7 minutes, stirring often, until the gravy thickens.
Ladle the chorizo gravy over the biscuits, adding salt and pepper to taste.
Serve warm.
