These Chocolate Chip Banana Bars are the perfect combination of ripe bananas and melty chocolate chips, baked into soft, chewy bars. The natural sweetness of overripe bananas pairs beautifully with the richness of chocolate, making each bite a satisfying treat. The addition of brown sugar creates a lovely caramel-like sweetness that complements the bananas, while the chocolate chips bring in a touch of decadence. These bars are perfect for an afternoon snack, dessert, or even a quick breakfast.
½ cup (1 stick) unsalted butter, room temperature (113g)
1 cup packed light brown sugar (200g)
1 large egg, room temperature (56g)
1 ½ teaspoons vanilla extract or vanilla bean paste (6g)
½ teaspoon fine salt (3g)
1 cup all-purpose flour (125g)
1 cup mashed overripe banana (about 2 large bananas, 250g)
¾ cup chocolate chips, chopped (125g)
Preheat the oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper or grease it with butter.
In a medium bowl, cream the butter and brown sugar together until smooth and light. Add the egg and vanilla extract, and mix until combined.
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Stir in the mashed bananas and chopped chocolate chips until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan and spread it evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs.
Let the bars cool completely in the pan before cutting into squares and serving.
