4 salmon fillets (about 1.5 lbs or 680g)
Salt and pepper, to taste
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic, minced
1 cup cherry tomatoes, halved
3 cups spinach, fresh
1/2 cup heavy cream
1/2 cup Parmesan cheese, grated
1 teaspoon basil, fresh or dried
1/2 teaspoon red pepper flakes (optional)
Season the salmon fillets with salt and pepper on both sides.
Heat olive oil and butter in a large skillet over medium-high heat.
Add the salmon fillets to the skillet and cook for 3-4 minutes per side, or until cooked through and golden brown. Remove from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
