Ingredients:
2 lbs boneless skinless chicken breasts
½ cup chicken broth
6 cloves garlic, crushed
½ tbsp chopped ginger
¼ cup chopped green onions
Pinch of salt and pepper
For the Korean BBQ Sauce:
¼ cup Tamari soy sauce
¼ cup sweet chili sauce
2 tbsp hoisin sauce
1 tbsp light brown sugar
1 tbsp honey
1 tbsp rice wine vinegar
1 tbsp sesame oil
½ tbsp minced ginger
1 tsp turmeric
½ tsp coarse black pepper
½ tsp red pepper flakes
1 tbsp cornstarch + 1 tbsp water (for slurry)
Garnish:
Sesame seeds
Baby carrots, thinly sliced
Shallots, thinly sliced
Green onions, chopped
Directions:
Pat chicken dry and season with a pinch of salt and pepper. Place in the slow cooker with garlic, ginger, and green onions.
Pour the chicken broth into the slow cooker, cover, and cook on high for 4 hours or low for 5 hours.
Once cooked, shred the chicken and drain any excess liquid. Return the shredded chicken to the slow cooker.
In a separate bowl, whisk together the soy sauce, sweet chili sauce, hoisin, brown sugar, honey, rice wine vinegar, sesame oil, minced ginger, turmeric, black pepper, and red pepper flakes.
In a small bowl, mix the cornstarch and water to make a slurry, then add it to the sauce and whisk.
