1 lb sausage (Italian sausage or any preferred variety)
4 medium potatoes, peeled and diced
1 medium onion, diced
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/2 cup chicken broth
1/4 teaspoon garlic powder
1/2 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil (for browning the sausage)
In a skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a spoon. Once cooked, drain any excess fat and set aside.
In the bottom of the slow cooker, layer the diced potatoes and onions.
Add the cooked sausage over the potatoes and onions in the slow cooker.
Pour the heavy cream and chicken broth over the mixture, then sprinkle with garlic powder, thyme, salt, and pepper. Stir to combine.
Cover and cook on low for 6-7 hours or until the potatoes are tender and fully cooked.
Once the casserole is done cooking, sprinkle the shredded cheddar cheese over the top and let it melt before serving.
