These Cheesecake Stuffed Chocolate Chip Cookies combine the best of both worlds—gooey chocolate chip cookies and creamy cheesecake filling. These irresistible treats are perfect for any occasion, from casual snacking to special gatherings.
For the Cookie Dough:
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup unsalted butter, melted
1 cup packed brown sugar
½ cup granulated sugar
1 tablespoon vanilla extract
1 large egg
1 egg yolk
2 cups chocolate chips
For the Cheesecake Filling:
8 oz cream cheese, softened
¼ cup granulated sugar
1 teaspoon vanilla extract
Preheat your oven to 325°F (165°C) and line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large bowl, cream the melted butter, brown sugar, and granulated sugar until smooth. Add the vanilla extract, egg, and egg yolk, mixing until creamy.
Gradually add the dry ingredients into the wet mixture, then fold in the chocolate chips.
In a separate bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
Scoop out tablespoon-sized balls of cookie dough and flatten them. Place a dollop of cheesecake filling in the center of each, then cover with more dough, sealing the edges.
Bake for 15-18 minutes, or until the edges are lightly golden. Let the cookies cool for 5 minutes on the baking sheet before transferring them to a wire rack.
