Chicken Florentine Meatballs
Tender chicken meatballs infused with spinach and Parmesan, simmered in a savory tomato sauce.
Ingredients:
1 lb ground chicken
1 cup fresh spinach, chopped
1/4 cup grated Parmesan cheese
1 egg
1/2 cup breadcrumbs
2 cloves garlic, minced
Salt and pepper, to taste
2 cups marinara sauce
Directions:
Preheat oven to 375°F (190°C).
In a bowl, combine ground chicken, spinach, Parmesan, egg, breadcrumbs, garlic, salt, and pepper.
Form mixture into meatballs and place on a baking sheet.
Bake for 20 minutes, until cooked through.
In a saucepan, heat marinara sauce over medium heat.
Add meatballs to sauce and simmer for 10 minutes.
Serve hot.
