For the Brown Gravy
Follow the linked recipe for the brown gravy or use your preferred homemade or store-bought version.
Preheat the oven to 350°F (175°C). Line a sheet pan with aluminum foil and spray with cooking spray or use parchment paper.
Heat olive oil in a skillet over medium heat. Add diced onions, salt, and pepper, cooking for 7-8 minutes until softened and caramelized.
Add garlic and cook for an additional minute, then stir in thyme, tomato paste, and Worcestershire sauce.
Pour in the chicken broth, stir to combine, and let it reduce for about 1 minute before removing from heat. Allow the mixture to cool.
In a large bowl, combine the meatloaf mix, breadcrumbs, and beaten eggs. Add the cooled onion mixture and mix until well combined.
Form the meat mixture into a loaf shape and place it on the prepared sheet pan.
Bake for 50-55 minutes, checking for doneness with a meat thermometer. The meatloaf should register 160°F (71°C) internally.
While the meatloaf is baking, prepare the brown gravy. Once the meatloaf is done, pour the gravy over the top or serve it on the side.
Let the meatloaf rest for 5-10 minutes before slicing. Serve warm with your favorite sides.
