This easy version of Beef Bulgogi uses ground beef, simmered in a delicious bulgogi sauce and topped with scallions, sesame seeds, and a soft-boiled egg. It’s a quick and flavorful dish, perfect for a satisfying dinner in just 25 minutes.
Bulgogi Sauce
¼ cup soy sauce
2 tablespoons rice wine vinegar
1 tablespoon brown sugar, plus 2 teaspoons
2 teaspoons sesame oil
1 teaspoon fresh ginger, minced
1 teaspoon fresh garlic, minced
Ground Beef
1 pound ground beef
½ small yellow onion, diced
Topping
1 tablespoon scallion, diced
1 teaspoon sesame seeds
4 large soft-boiled eggs
In a medium bowl, combine soy sauce, rice wine vinegar, brown sugar, sesame oil, ginger, and garlic. Mix well and set aside.
In a skillet over medium heat, cook ground beef and diced onion until browned (about 5 minutes), with a little pink remaining in the meat.
Add the bulgogi sauce to the skillet and mix well. Simmer for 6-10 minutes, then remove from heat.
Divide the mixture evenly into 4 bowls.
Top each bowl with diced scallions, sesame seeds, and a soft-boiled egg.
Serve over rice.
