This easy Buffalo Chicken Dip recipe is packed with high protein, thanks to a simple ingredient swap—cottage cheese! It's a perfect snack or appetizer for any gathering, offering creamy and spicy flavor with minimal prep time.
1 lb cooked boneless skinless chicken breast, chopped small
2 cups cottage cheese (blend if you prefer a smoother dip)
1 ¼ cup shredded cheddar cheese
¼ cup Frank's Red hot sauce (or preferred hot sauce)
1 teaspoon garlic powder
1 green onion for garnish
Preheat the oven to 400°F (200°C).
In a medium bowl, combine cooked chicken, cottage cheese, 1 cup shredded cheddar, hot sauce, and garlic powder. Mix well.
Transfer the mixture to a small casserole dish and smooth out the top. Sprinkle with the remaining ¼ cup cheddar cheese.
Bake for 15-20 minutes, or until bubbly. For a browned, crispy top, broil for 1-2 minutes (watch carefully to avoid burning).
Allow the dip to cool for a few minutes before serving with fresh veggie sticks or tortilla chips.
