This Stuffed Salmon recipe features fresh salmon fillets stuffed with a Mediterranean-inspired mixture of sautéed spinach, feta cheese, roasted red peppers, and parmesan. It’s oven-baked and ready in about 30 minutes, making it an impressive yet simple dinner option perfect for family meals or entertaining guests.
4 pieces salmon fillets (6 ounces each, approx. 170 grams)
2 tablespoons olive oil (divided)
3 cups baby spinach
1 teaspoon Italian seasoning
½ teaspoon paprika (regular or smoked)
Pinch of cayenne pepper
Approx. 150 grams (5.3 oz) feta cheese, crumbled
¼ cup freshly grated parmesan cheese
¼ cup jarred roasted red peppers, chopped
Salt and pepper, to taste
Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
Slice each salmon fillet lengthwise down the middle, leaving a hinge so the fillet stays intact.
Brush salmon with 1 tablespoon olive oil and season with salt and pepper. Set aside.
Heat remaining olive oil in a pan over medium heat. Add spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté until spinach wilts.
Remove from heat and stir in roasted red peppers, feta cheese, and parmesan. Mix well, pressing the feta to soften.
Spoon the spinach and cheese mixture into the salmon cuts evenly.
Place stuffed salmon on the baking sheet and bake for 12-17 minutes until salmon is cooked through and opaque.
