This Grilled Pineapple is a juicy, caramelized dessert with bold tropical flavor. The smoky char from grilling enhances the sweetness, while a spiced brown sugar and rum marinade adds depth. Serve it warm with ice cream or as a side with grilled meats—it's quick, easy, and unforgettable.
1 fresh pineapple
¼ cup melted butter
¼ cup dark brown sugar
¼ cup dark rum (optional)
1 teaspoon ground cinnamon
Pinch of salt
Cut off the top and bottom of the pineapple, slice off the rind, and cut into ¾–1-inch spears or rings. Remove the core if using rings.
Place pineapple in a large zip-top bag.
In a small bowl, whisk melted butter, brown sugar, rum (if using), cinnamon, and salt.
Pour the mixture over the pineapple in the bag. Seal and refrigerate for 20–30 minutes.
Preheat grill or grill pan to 375–400°F (medium heat).
Grill the pineapple for 4–6 minutes per side, brushing with leftover marinade.
Remove from grill once caramelized and serve immediately.
