12 full-size graham crackers
2 tablespoons granulated sugar
6 tablespoons unsalted butter, melted
For the Brownies:
1/2 cup vegetable oil (such as grapeseed)
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup bittersweet chocolate chips
For the Topping:
2 heaping cups mini marshmallows (about 3.5 ounces)
Directions:
Preheat oven to 350°F. Grease an 8x8-inch pan with oil or nonstick spray and line with parchment paper, leaving overhang on two sides.
In a food processor, pulse the graham crackers and sugar until finely ground. Add melted butter and pulse until evenly coated.
