The combination of spicy, tangy, and cheesy flavors makes it a crowd favorite, and it’s quick to make, too!
Ingredients:
1 tablespoon olive oil
1 lb chicken breast
Salt and pepper, to taste
½ cup buffalo sauce
½ cup ranch dressing
1 bag corn tortilla chips (10-15 ounces)
1 cup shredded Colby Jack cheese
2-3 green onions, sliced
Directions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Optionally, line a large rimmed baking sheet with foil for easier cleanup.
Cook the Chicken:
Heat olive oil in a large sauté pan over medium heat. Add chicken breasts and season with salt and pepper. Cook until the chicken is no longer pink, about 10-12 minutes. Remove from the pan and shred the chicken.
Make the Buffalo Chicken Mixture:
Return the shredded chicken to the sauté pan and stir in buffalo sauce and ranch dressing. Let it simmer for 1-2 minutes to combine the flavors.
Assemble the Nachos:
On the prepared baking sheet, spread an even layer of tortilla chips. Top with the buffalo chicken mixture and sprinkle shredded cheese over the top.
Bake:
Bake in the preheated oven for 5-7 minutes, or until the cheese is fully melted.
Garnish and Serve:
Remove from the oven and garnish with sliced green onions. Serve immediately with extra ranch dressing on the side for dipping.
