This recipe combines the sweetness of brown sugar with the heat of gochujang (Korean red pepper paste) and the savory flavors of sesame oil and soy sauce. The result is a moist, flavorful meatloaf that's a real crowd-pleaser, perfect for family dinners or special occasions.
2 pounds ground beef or a mix of beef and pork
1 cup panko breadcrumbs
½ cup finely chopped onion
2 cloves garlic, minced
¼ cup soy sauce
¼ cup gochujang (Korean red pepper paste)
¼ cup brown sugar
1 tablespoon sesame oil
2 large eggs
1 teaspoon black pepper
½ cup chopped green onions
¼ cup chopped cilantro (optional)
½ cup ketchup (for topping)
Sesame seeds (for garnish)
Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
In a large mixing bowl, combine ground beef, panko breadcrumbs, garlic, onion, soy sauce, gochujang, brown sugar, sesame oil, black pepper, and eggs.
Add the chopped green onions and cilantro (optional), then mix until well combined.
Transfer the meat mixture to the prepared loaf pan and smooth the top to form an even loaf.
Spread ketchup evenly on top of the meatloaf.
Bake for about 40 minutes, or until the internal temperature reaches 160°F (70°C).
Once done, remove from the oven and let it rest for about 10 minutes.
Garnish with sesame seeds and slice into portions to serve.
